Having a protein filled breakfast is a great way to stay satisfied and full throughout the day!
Egg bites make for a great breakfast option that is quick, easy, and portable, not to mention protein packed. Perfect for an easy breakfast before a busy day, or post workout treat after a heavy lift, egg cups are a great way to fuel your day.
Ingredients:
10 eggs
1 cup shredded cheese (Monterey Jack, cheddar, mozzarella, pepper jack, etc …)
3/4 cup finely chopped spinach
1/2 cup fire roasted jarred red peppers (finely chopped)
Dash of salt & pepper
Instructions:
1) Preheat the oven to 300 degrees Fahrenheit and spray a muffin pan with non-stick spray, then set aside. Fill a 9x13 baking dish halfway full with water and place it on the lower rack of the oven.
2) Grab a large bowl and whisk together ten eggs.
3) Grab the muffin tray and divide eggs among 12 muffin cups, each muffin cup will contain about 1/4 cup of egg mixture.
4) Top each egg cup with a bit of fire-roasted red peppers, followed by spinach, and then cheese. Divide portioned ingredients evenly among 12 muffin cups.
5) Mix the ingredients in each cup to combine.
6) Grab the muffin tin and place it in the middle rack of the oven for 30 minutes, or until the centre of the egg cups are solidified.
7) Pop out egg bites and store in an airtight container in the fridge, simply reheat for 30 seconds in the microwave before eating. Or freeze egg cups and reheat for 1.5-2 minutes in the microwave.
Customizations:
Eggs: swap out whole eggs for egg whites for a lower fat option!
Vegetables: change out vegetables and try different options such as green onions, tomatoes, peppers, and more!
Protein: bump up the protein by adding a bit of meat (bacon, chopped chicken, ground sausage)!
Cheese: swap out the cheese for some different flavours (cheddar cheese, Monterey Jack, provolone, mozzarella, etc …)!
